Chocolate Chip Rum Banana Bread with Maple Almond Butter (GF, DF)

I love banana bread but it requires so much sugar to taste yummy! Here's my favorite banana bread recipe from geniuskitchen.com simplified and health-ified!

Ingredients:
-Olive Oil
-1/2 cup earth balance soy free butter substitute (can be cold)
-3/4 cup coconut sugar
-2 room temperature duck eggs
-4 super ripe bananas
-1 1/2 cups Otto's Cassava Flour
-1 tsp baking soda
-1/2 tsp salt
-1 tbsp rum (optional)
-1/4 cup Enjoy Life chocolate chips (optional)
-Almond Butter to spread (optional)
Directions:
1. Preheat oven to 350 degrees and grease a bread pan with olive oil
2. Add butter and sugar to food processor and blend until creamy.
3. Add bananas, rum, and eggs, blend for 1.5-2 minutes
4. Sift flour, soda, salt and add to mix, blend until thick.
5. Stir in chocolate chips and add mixture to greased pan
6. Put mixture in oven for 55 minutes or until top is a golden brown color and springs back when pressed gently. Leave to cool for 20 minutes, then cut out individual pieces and spread maple almond butter over the sides.
