Garbanzo Fava Bread with Vinegarette Roasted Peppers and Greens

Light, delicious, Paleo, and gluten free! I started by making Garbanzo Fava bread (it's so thick, rich and buttery!) then topped that with greens mixed with fire roasted peppers, Bulgarian Sheep feta, avocado from the tree in Grandma's garden, and drizzled with my homemade white vinaigrette sauce.

Garbanzo Fava Bread:

-1 tsp oil of choice

-1/2 cup garbanzo fava flour*

-1/4 tsp paprika/other favorite seasoning (optional)

-1/2 cup plus 2 tbsp water

-1 tsp garlic salt (or regular salt)

1. Stick pan on the stove, drizzle a medium sized pan with oil of choice, warm it on medium power until oil is hot.

2. While waiting for oil to heat up, mix together flour, water, salt, and any additional seasonings. Mixture should be thick but more water can be added if thinner consistency is desired. Set it to the side for around 15 to 25 minutes.

3. Take a 1/2 cup measuring cup, dip into your mixture, fill to the top, then dump contents into the middle of your pan. Spread the mixture around until it is the desired thickness in the pan. Let the mixture cook on the stove for 4-5 minutes or until the bottom is a caramel colored brown and slightly crispy.

4. Flip your fava bread, let it cook for an additional 4-5 minutes.

The Vinaigrette Green Salad:

- 3/4 cup greens ( I used arugula)

- 2 tsp white vinegar

- 3 tsp Olive Oil (make sure it's EVOO!)

- salt and pepper to taste

Toss all ingredients together and stick in the fridge until you're ready to eat it.

Optional Additions:

- Roasted Red Peppers (at any grocery store!)

- Sheep Feta (so rich, creamy, delicious)

- Over Easy Egg (creates a rich and complex flavor)

- Canned Tuna (mix with mayo, 1/2 tsp salt, 1/8 tsp paprika, 1 tsp lemon juice)

- Avocados (the ones from the old Avocado tree in Grandma's yard!!)

Stick your Garbanzo Fava bread on your plate, add your greens and any extra additions to the top; tuck in for a protein packed, flavorful vegetarian lunch!

 

* I recommend Bob's Red Mill Garbanzo Fava Flour. It's quite affordable and all their ingredients are high quality. :) You can find it online on their site, it's available on Amazon, OR found in almost all grocery stores (found either in the Bob's Red Mill section, Gluten Free section, or the Baking aisle).
