Allergy Friendly Chocolate Chip Pancakes (Gluten-Full or Gluten-Free)

It can be expensive to cater to different tummy requirements in your household. Here is a simple recipe for fluffy and delicious pancakes that works for any allergy need:

Chocolate Chip Pancakes

*See below for some allergy-friendly ingredient recommendations

*2 cups sifted flour (GF or whole wheat)

1 tbsp baking powder

1/4 tsp sea salt

1/2 tbsp sugar (or sugar substitute)

*2 tbsp melted butter substitute

1 tsp vanilla

2 cups almond milk (or other milk of choice)

*2 duck eggs ( can use chicken)

*1/3 cup chocolate chips

maple syrup

1. Heat griddle to 275 degrees or to a low-medium setting. Add a drizzle of oil to the griddle (I like to add olive oil because it adds a subtle earthiness to the cakes).

2. Mix all dry ingredients together with a fork. In a separate bowl, mix all wet ingredients together. Add wet ingredients to bowl of dry ingredients and mix around ingredients until just combined (over mixing gives you flat and mushy pancakes).

3. Use a 1/3 cup measuring cup, dip into batter and pour onto griddle. Let the pancakes cook until formed bubbles in center and sides start bursting and the edges have formed a slightly golden cover.

4. Serve with a dollop of butter and 2 tbsp of maple syrup, enjoy!

- I love duck eggs. They have a larger yellow yolk, they're thicker, and richer than normal chicken eggs. They're perfect for people who have a sensitivity to chicken eggs. You can find them at your local farmer market or at a food co-op near you!

-The best butter substitute I've found is Earth Balance. It's in a yellow container next to the normal butter in your local grocery store. It tastes so similar to regular butter and it's been a 100% successful substitute for all recipes I've used that call for butter.
