Superfood Spaghetti Sauce

I love pesto sauce, but it can get a little old after a bit... here is a twist on the classic that's full of green veggies!!!

Here's What Ya Need:
Your favorite gluten free pasta*
1/3 cup olive oil
1/4 onion (sliced thin)
2 cloves garlic (minced)
1/2 cup roasted cashews
1/8 cup pine nuts
1/4 tsp italian seasoning
1/4 tsp salt
1 bag of superfood lettuce
1/2 a squeezed lemon
2 tbsp water
Step 1: Heat a large pan on medium heat with 1/3 cup olive oil. Add in your onion and garlic. Stir occasionally until both are a nice caramel color.
Step 2: Add in nuts, italian seasoning, and salt. Stir occasionally until entire mixture is a caramel color ( but not burnt!)
Step 3: Turn off heat and add your lettuce to the pan. Stir gently until the lettuce has shrunk down and has been combined with all other ingredients. Let the mixture cool while you make your spaghetti noodles ( see my recommendation below!).
Step 4: Add ingredients from pan into your food processor with the lemon and water. Blend until creamy, pour over your hot noodles, and serve!
Warning - may cause sudden bursts of incredible energy after eating due to all them nutrients doing a little dance in your tummy!!!
